Ingredients

  • 1/2 cup chopped pumpkin, dry roasted
  • 1/3 cup drained, canned chickpeas
  • 15g baby spinach
  • 2 thin slices red onion, cut into thin strips
  • 20g reduced fat feta cheese
  • 1 tablespoon ZOOSH Mighty Balsamic Splash Light Dressing


Method

  1. PLACE all salad ingredients in a bowl and toss with dressing.
  2. Serve immediately.


Tips & Hints

  1. Leftover roast pumpkin is perfect for this recipe.
