Bring oil over medium heat in a large soup pot. Add the onion, zucchini, pumpkin, carrots and garlic and saute for about 10 minutes until softened.
Add the turkey mince and continue to cook for another 6-7 minutes, stirring to cook evenly and breaking up the meat until the meat is cooked through.
Add the diced tomatoes, tomato paste, beans, chili powder, cumin, cayenne, salt and stir to combine. Reduce the heat and simmer uncovered for about an hour to thicken.
