Ingredients
500g orange sweet potatoes, washed, dried and halved lengthways
2 tablespoons Flora Original Margarine
2 teaspoons olive oil
500g lean beef strips
1 brown onion, sliced
250g button mushrooms, sliced
1 x 40g packet Continental Beef Stroganoff Recipe Base
1 1/4 cups water
2 tablespoons sour cream
Green beans, to serve
Method
Bring sweet potatoes to the boil in a saucepan of boiling water. Boil for 10-12 minutes until tender. Drain and return to pan. Cook, stirring, over medium heat for 1 minute until dry. Stir in margarine. Season with salt and pepper. Mash until smooth. Set aside
Meanwhile, heat oil in a large frying pan over medium-high heat. Brown beef in batches. Transfer to a plate. Set aside. Add onion and mushrooms to pan. Cook, stirring often, for 3-4 minutes until tender
Combine stroganoff recipe base and water in a jug. Add mixture to pan. Cover and bring to the boil. Add beef. Reduce heat and simmer, stirring occasionally, for 20 minutes until beef is tender. Remove from heat. Stir through sour cream
Preheat a grill on medium-high heat. Spoon stroganoff mixture into 4 greased 1 1/2-cup capacity ovenproof ramekins. Top with mash. Place dishes under grill (top about 5cm from heat source) and grill until golden and bubbling. Serve with beans
