Easy, cheesy potato stack recipe made in a muffin tin. The trick to this flavour packed idea is to slice the potatoes the same size using a mandolin or food processor which ensures even cooking.
Ingredients
1kg starchy potatoes such as Nicola or Desiree variety, washed
150g melted butter
1/2 cup grated parmesan
1 tsp smoked paprika
1 tbsp salt
1/4 extra grated parmesan, to serve
Method
Pre-heat oven to 200°C (180°C fan forced)
Using a mandolin or food processor, slice each potato thinly
Transfer slices to a large bowl, add melted butter, parmesan, salt, smoked paprika. Mix well with hands
Line a large oven tray with baking paper. Make an even number of stacks and secure each with a toothpick
Roast for 45mins to an hour or until golden. Sprinkle stacks with extra parmesan, remove toothpicks and serve immediately
