Place yoghurt in a bowl
Whisk it with a fork so that it becomes "flat", add salt and mix some more
Slowly add the flour, whilst stirring at the same time. It needs to become firm and only slight sticky
Once combined, knead on a surface lightly dusted in flour and then form into a ball
Place in a bowl and cover with cling film
Leave to rest for 15 minutes
Take out of the bowl and cut into four quarters
One at a time, roll out the dough quarters- make it paper thin an almost translucent
Add a scattering of spinach and a scattering of feta
Fold over and seal edges using the end of a fork
Place each Gozleme one at a time into a hot, oiled pan
Flip when golden and cook on the other side
Cut with pizza cutter and serve with lemon wedges
