Place caster sugar and ½ cup water in a saucepan over low heat and stir to dissolve sugar
Increase the heat to medium-high and simmer for 3 minutes until syrupy
Stir in the passionfruit pulp and simmer gently for 3 minutes
Allow to cool
Fruit Toast
Ingredients
8 slices, thick cut fruit toast
1/2 cup ricotta
2 bananas, sliced into thin slices
Method
Toast fruit bread until crisp. Spread each slice with 1-2 tablespoons of ricotta. Top with banana slices. Finish with 2 tablespoons of passionfruit syrup.
