Make hasselback potatoes with sweet potato as an incredible side dish. Serve your sweet potato hasselbacks with parmesan. You can also cook these sweet potatoes in the air fryer. See tips.
Ingredients
6 x 200g Sweet Potatoes, scrubbed
6 sprigs fresh thyme, plus extra for serving olive oil
1/4 teaspoon sea salt
1/3 cup finely grated parmesan
Method
Preheat oven to 200°C/180°C. Carefully cut 3mm slices into the sweet potatoes, leaving 5mm intact at the bottom. Place on a baking-paper lined oven tray
Strip the leaves from the thyme and tuck in between the fans of the sweet potatoes
Drizzle with oil and sprinkle with salt. Sprinkle with salt and pepper, then drizzle with olive oil
Bake for 1 hour -1 hour 10 minutes until golden and soft in the middle when easily pierced with a knife. Serve sprinkled with parmesan
Tips & Hints
To air fry hasselback sweet potatoes, place sweet potatoes on an air fryer rack or basket in single layer, making sure to leave some space between them and not stacking them. Cook at 180°C for 20 minutes (depending on the size of your sweet potatoes), flipping over halfway through the cooking time. Once the potatoes are fork-tender, remove them from the air-fryer and sprinkle with Parmesan.
