Use this sweet potato toast recipe as a healthy low carb alternative to bread. These sweet potato toast toppings are an easy way to dress up sweet potato toast.

Sweet Potato Toast Topped with Mashed Avocado, Chicken and Aioli

Ingredients

  • 6 slices (5mm thick) Sweet Potato, skin on
  • 1 avocado, mashed
  • 3/4 cup baby spinach leaves
  • 1 cup shredded BBQ chicken
  • 1/4 cup aioli


Method

  1. Preheat oven to 200°C/180°C fan-forced. Line an oven tray with baking paper Arrange slices on tray. Spray with oil and season to taste. Bake for 10-15 minutes until golden and tender
  2. Spread toasts with avocado. Top with spinach and chicken, Drizzle with aioli. Serve immediately


Tips & Hints

  1. You can also cook toasts in a sandwich press (between 2 sheets of baking paper) for about 5 minutes until browned and tender.


Sweet Potato Toast Topped with Tomato Medley and Balsamic Glaze

Ingredients

  • 6 slices (5mm thick) Sweet Potato, skin on
  • 200g tomato medley, chopped
  • 1/2 red onion, thinly sliced
  • Baby basil leaves and balsamic glaze, to serve


Method

  1. Preheat oven to 200°C/180°C fan-forced. Line an oven tray with baking paper. Arrange slices on tray. Spray with oil and season to taste. Bake for 10-15 minutes until golden and tender
  2. Top toasts with tomatoes and onion. Sprinkle with basil leaves and drizzle with balsamic glaze. Serve immediately
