This potato rosti recipe with a flavour-packed cheese melt on top is great for brunch.
Ingredients
500g potatoes, peeled and grated
40g Western Star butter, melted
Salt & pepper
50ml Olive oil
50g Perfect Italiano Perfect Melt cheese
Method
Place peeled and grated potato in a colander and squeeze out all moisture. Transfer to a large bowl and add butter. Season with salt and pepper
Heat oil in a frying pan over medium heat, portion potato mix into handfuls before pacing in the pan. Turn each Rosti after 3-4 minutes ensuring they are golden brown on both sides
Place Rosti's on a tray and top with Perfect Italiano Perfect Melt cheese. Place in an oven or under a grill until cheese has melted and it begins to brown. Remove and serve immediately
Tips & Hints
Serve alongside eggs, smashed avocado, chutney or fresh tomato.
