Bring authentic flavour to the table with this quick and easy Pad Thai. Made with prawns, fresh veggies, egg, and Passage to Asia Pad Thai Stir-fry Sauce, it’s finished with crunchy peanuts, bean sprouts and herbs for that perfect balance of flavour and texture.

Ingredients

  • 375g pad Thai or flat rice noodles
  • 2 tbs vegetable oil
  • 16 green prawns, peeled, deveined
  • 5 green onions, sliced diagonally
  • 1 small brown onion, sliced finely
  • 1 large carrot, shredded or thinly sliced
  • 2 eggs, lightly whisked
  • 200g Passage to Asia Pad Thai Stir-fry sauce
  • 1 cup bean sprouts, trimmed, to serve
  • Small red chillies, thinly sliced, to serve
  • Thai basil or coriander, to serve
  • Chopped peanuts, to serve


Method

  1. Prepare noodles according to pack instructions. Drain and set aside.
  2. Heat 1 tbs oil in a hot wok. Add prawns and cook for 3 minutes or until just cooked. Transfer to a bowl. Add vegetables and cook for 5 minutes or until just cooked through.
  3. Move vegetables to one side of the pan. Add eggs and cook for 1 minute or until just set the mix through the vegetables. Return noodles to the pan and mix. Add Passage to Asia Pad Thai Stir-fry Sauce. Toss until well combined and heated through. Return prawns to pan to heat through.
  4. Remove from heat and serve, garnished with bean sprouts, chillies, coriander and chopped peanuts.
