These easy bubble and squeak patties can be served as lunch or dinner. This recipes is made with McCain Corn and Peas who support Foodbank.
Ingredients
250g McCain Peas
250g McCain Corn
1kg starchy potatoes, cooked, mashed and cooled
1 egg, lightly beaten
1/2 cup breadcrumbs
1/2 teaspoon garlic powder
1 teaspoon dried oregano
1/3 cup flour, for dusting
Oil to shallow fry
Method
In a medium saucepan, gently boil the peas and corn together until soft. Divide in half, and mash or pulse one half with a stick blender. Set both aside to cool
Combine the vegetables with the cooled mash and all remaining ingredients, except the flour. Season to taste
Shape into 8 1/2 cup-sized patties and lightly toss in flour, shaking off excess
Heat oil in a frypan and shallow fry in batches, approximately 3 minutes each side or until cooked and golden
