This recipe was created in support of the Foodbank, 2017 Shop and Share campaign. We thank McCain for supporting Foodbank. This recipe is made with McCain Corn.
Ingredients
250g cream cheese, softened
1/2 cup sour cream
1 1/2 cups cheese mix*
1/4 cup creamy roasted garlic dressing*
1/2 teaspoon smoked paprika
200g bacon, chopped, pan fried and cooled
500g McCain Corn, thawed
1/4 cup cheese mix, extra
Tortilla chips and shallots, to serve
Method
Preheat oven 180°C. Meanwhile, in a large bowl, combine cream cheese, sour cream, cheese, garlic dressing, paprika and bacon, reserving some bacon for garnish. Stir until fully combined
Gently stir through corn and pour into an 8 cup capacity baking dish. Top with extra cheese mix. Bake for 25 minutes or until bubbly
To serve, top with reserved bacon bits, shallots and tortillas
