Weet-Bix Apple Fritters

Ingredients

  • 1 large ripe banana, mashed
  • 3 large eggs, lightly whisked
  • 1/3 cup soy milk
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 tablespoons flour, plus extra
  • 2 Sanitarium Weet-Bix, crushed
  • 2 large apples, peeled, cored and sliced into 1/2 cm rounds
  • 1/4 cup vegetable oil, for frying
  • Icing sugar for dusting
  • Fruit and yoghurt, to serve


Method

  1. In a medium bowl, combine eggs, soy milk and banana. Mix well
  2. Add baking powder, cinnamon, flour and stir to combine. Stir through crushed Weet-Bix
  3. Dip apple rings one at a time into extra flour to lightly coat
  4. Dip into the batter, and shallow fry in oil over a medium heat, turning after 1 minute. Remove and set aside. Keep warm while cooking the remaining apple fritters
  5. Dust with icing sugar, and serve with fruit and yoghurt
