Ingredients
1 large ripe banana, mashed
3 large eggs, lightly whisked
1/3 cup soy milk
1 teaspoon baking powder
1 teaspoon cinnamon
2 tablespoons flour, plus extra
2 Sanitarium Weet-Bix, crushed
2 large apples, peeled, cored and sliced into 1/2 cm rounds
1/4 cup vegetable oil, for frying
Icing sugar for dusting
Fruit and yoghurt, to serve
Method
In a medium bowl, combine eggs, soy milk and banana. Mix well
Add baking powder, cinnamon, flour and stir to combine. Stir through crushed Weet-Bix
Dip apple rings one at a time into extra flour to lightly coat
Dip into the batter, and shallow fry in oil over a medium heat, turning after 1 minute. Remove and set aside. Keep warm while cooking the remaining apple fritters
Dust with icing sugar, and serve with fruit and yoghurt
