This easy and tasty tuna melt, is great for a quick snack or lunch. Made for Foodbank Australia with John West tuna we are proud to support the brands that support Foodbank.

Ingredients

  • 4 x 95g tins John West Tempters Tuna in Olive oil, drained
  • 1/2 small red onion, finely diced
  • 2 tablespoons whole egg mayonnaise
  • 1/2 cup frozen corn, thawed
  • 4 thick slices of bread of choice
  • Spreadable butter
  • 2 teaspoons Dijon mustard
  • 2 ripe tomatoes, sliced
  • 1 cup shredded cheese blend
  • Chopped parsley, to serve


Method

  1. Pre heat grill to medium high heat
  2. In a medium bowl, combine the tuna, mayonnaise, onion, corn and season with salt and pepper
  3. Toast one side of the bread slices. Remove from grill. Spread butter over the uncooked side of the bread slices, then spread with mustard and top with tomato slices
  4. Divide the tuna mixture evenly on top of each of the bread slices, then top with the cheese
  5. Place under a pre-heated grill for 5 minutes or until golden
  6. Serve topped with chopped parsley
