Tuna Stuffed Avocado

Support the brands that support Foodbank. This simple snack idea uses John West Tuna.

Ingredients

  • 2 x avocado, halved and seed removed
  • 2 x 95g John West Tuna Tempter in Olive oil, drained
  • 1 small red capsicum, finely diced
  • 1/4 cup coriander, chopped
  • 1 tablespoon lime juice
  • 2 teaspoons chipotle sauce (optional)
  • Salt and pepper to taste
  • 1 tablespoon toasted sesame seeds


Method

  1. Take each half of the avocado and scoop out the hole where the seed has been removed to make it slightly bigger
  2. Roughly chop the removed avocado flesh, add it to a medium sized bowl
  3. Add all remaining ingredients, including seasoning. Stir to combine
  4. Carefully spoon the tuna mix onto the avocado halves, dividing evenly
  5. Finish with a sprinkle tops with sesame seeds
