Ingredients
2 tablespoons vegetable oil
2 eggs, lightly beaten
1 brown onion, diced
100g diced ham
1 1/2 cups mixed vegetables
2 cloves garlic, crushed
1 teaspoon ginger, finely grated
3 cups cooked and cold Sunrice Medium Grain White Rice
1 tablespoon soy sauce
3 shallots, thinly sliced, plus extra for garnish
Method
Heat half of the oil in a large non-stick fry pan over medium heat. Add the eggs and swirl to coat the pan. Cook gently until just set. Slide egg out of pan and set aside. Chop roughly
Heat remaining oil in the pan, add the onion, ginger and garlic. Fry until soft. Add ham and fry 1 minute
Add frozen vegetables, stir for 1 minute. Add cold Sunrice Medium Grain White Rice and soy sauce. Stir fry for 2 minutes then add the eggs back into pan, add shallots and stir until combined and the vegetables are cooked
Top with remaining shallots and serve
Tips & Hints
Add sriracha for some zing or add shredded cooked chicken or pork to make a heartier meal.
