This incredible Malt Milk cake topped with Maltesers making it great for a party. Layer frosting in-between each layer of cake and then around the sides.
Cake
Ingredients
3 cups caster sugar
250g unsalted butter, softened and chopped
6 eggs
1 1/4 cups self-raising flour, sifted
2 1/2 cup plain flour, sifted
1/2 cup malt powder (see tips)
2 teaspoons baking powder
1 teaspoon bicarb soda
1 1/4 cups Devondale Full Cream Long Life Milk
2 tablespoons vegetable oil
2 teaspoons vanilla extract
Maltesers to decorate
Method
Pre-heat oven to 160°C. Grease and line two 20cm cake tins
In a stand mixer, beat sugar and butter until smooth and creamy
Add eggs, one at a time and beat until fully combined
Add combined flours, malt, baking powder and bicarb and mix until combined. Then add milk, oil and vanilla and mix until smooth
Pour evenly between the two tins and bake 45 minutes or until cooked
Cool in tins 10 mins, then transfer to wire rack to cool completely
Meanwhile, make the frosting
Ice cooled cakes in between layers, on top and around the edges
Decorate with crushed Malteasers and serve
Tips & Hints
We used Ovaltine malt powder
The cakes are cooked when tested with a skewer and comes out clean
Frosting
Ingredients
250 unsalted butter, room temp, chopped
1 cup malt powder (see tips)
2 cups icing sugar, sifted
1 tablespoon cocoa powder
2 tablespoons Devondale Full Cream Milk
Method
Beat the butter in a stand mixer until pale and creamy
Add in malt powder, icing sugar, cocoa and 1 tablespoon milk. Beat until smooth, adding remaining milk if necessary
