Thai Beef Coconut Rice with Peanut Sauce

Ingredients

  • 2 cups SunRice Medium Grain White Rice
  • 400ml coconut milk
  • 1 1/4 cups water
  • 2 tablespoons olive oil
  • 500g beef strips
  • 1 small red onion, sliced
  • 80g tube Thai stir through paste
  • 300g bag Asian coleslaw mix
  • 1 1/2 cup peanut satay sauce
  • Roasted peanuts, chopped and mint leaves to serve


Method

  1. Rinse the rice in water until water runs clear
  2. In a medium sized saucepan, mix together the rice, coconut milk and water. Cover and bring to the boil. Reduce heat and simmer for approximately 20 minutes or until liquid is absorbed
  3. Turn off heat and let sit for 10 minutes with the lid on
  4. Meanwhile, heat oil in a medium sized deep frypan or wok, over a high heat
  5. Fry the beef, in batches and set aside
  6. In the same pan, add the onion and fry until fragrant. Return the beef to the pan, add the Thai paste and cook for another minute. Add the Asian slaw mix and stir fry vegetables are just starting to soften
  7. Warm peanut sauce on the stovetop or in the microwave
  8. Serve beef with coconut rice, topped with warmed peanut satay sauce and garnishes

  1. We used Woolworths Asian Coleslaw, Gourmet Garden Thai Seasoning blended paste and Asian Tonight Simmer Sauce, Peanut Satay
