Ingredients

  • 1 punnet grape tomatoes, halved
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to season
  • 1 packet Cobs Salt of the Sea Hip Chips or your choice of flavour
  • 1 jar basil pesto
  • 80g fetta cheese, crumbled
  • 1 jar of pitted black olives, diced
  • Basil leaves to garnish


Method

  1. Pre-heat oven to 200°C
  2. Place tomatoes on a lined baking tray, drizzle with oil and season with salt and pepper. Roast for 15 minutes, or until skin just starts to split. Remove and cool
  3. Place Cobs Hip Chips on a serving platter
  4. Top Hip Chips with basil pesto
  5. Add 1 half of a grape tomato to each chip
  6. Sprinkle 1/4 tsp of diced olives over tomato
  7. Garnish with basil leaves and serve
