Healthy, crunchy baked chicken tenderloins recipe that's a the perfect family dinner or lunch idea. Crush one bag of The Big Cheese Naked Corn Chips and mix with herbs to add a wonderful crunchy texture and flavour.
Ingredients
1 bag The Big Cheese Naked Corn Chips
500g Chicken Tenders
1/3 cup Aioli
100g Mixed leaves
250g chopped Cherry tomatoes
1/2 Small Spanish onion
1/4 cup Grated parmesan
Extra virgin olive oil and lemon juice to drizzle over salad
Method
Preheat oven 200°C/180°C fan forced
Grease and line 2 oven trays
Pour chips into a large snap lock bag, seal. Using a rolling pin, crush the chips to a crumb. Tip onto a shallow tray
Brush the tenders with aioli and coat well. Press the tenders into the crumb and coat both sides
Heat an oiled frypan over medium heat. Lightly fry the tenders for 2 minutes on each side, or until golden
Make a salad using remaining ingredients
Place onto prepared trays and bake for 20 minutes or until cooked. Serve with the salad
