These savoury muffins start with an easy base recipe, then transform with two flavour twists: Ham & Corn, or Spinach, Dijon & Feta. Perfect for lunchboxes, snacks, or a light meal, they’re cheesy, fluffy and packed with flavour straight from the oven.

Base Mixture

Ingredients

  • 2 cups self-raising flour
  • ¾ cup grated tasty cheese
  • 2 tbsp chopped parsley
  • 1 cup milk
  • 1 egg
  • 125g Western Star Original Butter, melted


Method

  1. Combine sifted flour, cheese and parsley in a large bowl.
  2. Whisk milk and egg until combined. Add to bowl with butter and stir until just combined.
  3. Add your flavour variation of choice (as above), stir until just combined. Do not over mix.
  4. Spoon mixture evenly into a 12-hole (1/3 cup) capacity buttered muffin pan.
  5. Bake at 190°C (fan forced) for 20-25 minutes or until golden and cooked.


Flavour Variation: Ham and Corn

Ingredients

  • ¾ cup chopped ham
  • 125g can creamed corn
  • 2 green onions, thinly sliced


Method

  1. Follow steps 1 and 2 of the base recipe.
  2. Add your flavour variation of choice, stir until just combined. Do not over mix.
  3. Continue with steps 4 and 5 of the base recipe.


Flavour Variation: Spinach, Dijon and Feta

Ingredients

  • 80g Greek feta, crumbled
  • 1 cup baby spinach leaves, shredded
  • 2 green onions, thinly sliced
  • 1 tbsp Dijon mustard


Method

  1. Follow steps 1 and 2 of the base recipe.
  2. Add your flavour variation of choice, stir until just combined. Do not over mix.
  3. Continue with steps 4 and 5 of the base recipe.


Tips & Hints

  1. An ice cream scoop is a handy way of scooping sticky mixture into muffin pan holes.
  2. Muffins are best made and eaten on the same day, however day-old muffins can be freshened by warming in the microwave.
  3. Muffins can be individually wrapped and frozen for school or office lunches.
  4. Try out your own flavour variations with these muffins, like chopped semi- dried tomato and olive or grated carrot, zucchini and cooked bacon.
