Vegetable Slice

Quick and easy vegetable slice that is delicious for lunch or dinner. Experiment with different vegetable combinations to make it your own.
Ingredients
1 onion, diced
300g zucchini, coarsely grated
1 large carrot, peeled & grated
1 medium red capsicum, diced
6-8 button mushrooms, sliced
8-10 kalamata olives, sliced
3-4 silverbeet or kale leaves, shredded
300g firm tofu
200ml soy milk
1 tablespoon nutritional yeast
100g rice flour
2 teaspoons whole grain mustard
salt & pepper to taste
Method
In a medium bowl, add the onion, zucchini, carrot, capsicum, mushrooms, olives, and silverbeet.
In a food processor, add the tofu, soy milk, nutritional yeast, rice flour and mustard and blend until smooth.
Combine the tofu mixture with the zucchini mixture and season to taste.
Pour into a lightly greased baking dish and bake for 45 minutes to 1 hour at 180 C (160 C fan forced) until lightly browned on top.
Serve immediately or let it cool before refrigerating and serve cold.
Tips & Hints
Measures for vegetables are approximate. Experiment with different vegetables to make your slice the way you like it.
