2 medium zucchini, cut into ribbons using a vegetable peeler
125g yellow cherry tomatoes
220g tub ZoOSh Skip a Beat Sour Cream and Chive Creamy Dreamy Dip
5 eggs, lightly beaten
1 tablespoon flour
1/4 cup chopped mixed fresh herbs eg; parsley, marjoram, chives
Salt and pepper, to taste
2 tablespoons grated Parmesan cheese
Chives, extra, snipped for garnishing
Method
Heat oil in a frying pan over medium heat. Add the onion and garlic and cook for 2-3 minutes. Add the capsicum and cook for a further 3-4 minutes or until softened
Spread the onion mixture over the base of a greased 26cm ceramic quiche dish. Take a ribbon of zucchini and roll it up, placing it on the onion mixture in the centre of the dish. Repeat with the remaining slices of zucchini working outward from the centre until you reach the edge of the dish. It should look like a flower. Arrange tomatoes in between the zucchini at various places
Whisk together the dip, eggs, flour, herbs and seasonings then pour over vegetables. Sprinkle with Parmesan cheese and then bake in a moderate oven 180°C for 40-45 minutes. Sprinkle with chives and serve
