These fantastic avocado banana muffins are the perfect afternoon snack and great to add to kids lunch boxes. These super easy muffins are delicious and quick to whip up.
Ingredients
2 cups self-raising flour
1/2 teaspoon bicarbonate of soda
1 teaspoon baking powder
1/3 cup buttermilk
2 eggs
1/4 cup honey
1 teaspoon vanilla extract
2 bananas, mashed
1 avocado, mashed
1/2 punnet blueberries
Method
Preheat oven to 180°C. Line 12 muffin moulds with paper cases
Combine flours, bicarb soda and baking powder in a bowl
Whisk milk, eggs and honey in a jug. Add to flour with banana and avocado. Stir until just combined
Spoon mixture into prepared cases topping with blueberries; pressing into mix lightly. Bake for 20 minutes or until cooked through when tested in the centre with a skewer. Transfer to a wire rack to cool. Serve
