A royal favourite from Hyderabad, this sauce is full of aromatic spices. Cook in rice with meat or vegetables. This biryani recipe is ideal for families in need of a flavoursome dinner recipe with not much fuss.
Ingredients
Passage to India Biryani Simmer Sauce
500g diced chicken, lamb or beef
500g (2 Cups) Basmati Rice
150g natural yoghurt
Method
Cook rice and set aside
Seal meat in a hot, well-oiled saucepan. Add the simmer sauce, stir and reduce heat to low. Simmer for 20 mins or until tender
Sprinkle 1/3 of the rice into an oven-proof dish, ladle half the meat and sauce and top with half the yoghurt
Repeat this layering once more, then finish with a top layer of rice
Tightly cover the dish with foil. Cook for 40 minutes at 150°C or until well heated
Serve immediately

Makes a delicious accompaniment to a Vegetable Curry, served with Pappadums.
