A royal favourite from Hyderabad, this sauce is full of aromatic spices. Cook in rice with meat or vegetables. This biryani recipe is ideal for families in need of a flavoursome dinner recipe with not much fuss.

Ingredients

  • Passage to India Biryani Simmer Sauce
  • 500g diced chicken, lamb or beef
  • 500g (2 Cups) Basmati Rice
  • 150g natural yoghurt


Method

  1. Cook rice and set aside
  2. Seal meat in a hot, well-oiled saucepan. Add the simmer sauce, stir and reduce heat to low. Simmer for 20 mins or until tender
  3. Sprinkle 1/3 of the rice into an oven-proof dish, ladle half the meat and sauce and top with half the yoghurt
  4. Repeat this layering once more, then finish with a top layer of rice
  5. Tightly cover the dish with foil. Cook for 40 minutes at 150°C or until well heated
  6. Serve immediately


Tips & Hints

  1. Makes a delicious accompaniment to a Vegetable Curry, served with Pappadums.
