This easy chicken parmigiana can be on the table in 20 minutes. A great family dinner idea to be enjoyed during the week. The added avo gives this parmigiana a delicious nutritional boost.
Ingredients
4 chicken breast fillets
1/3 cup plain flour
2 eggs, lightly whisked
1 cup Panko breadcrumbs
2 tablespoons Dijon mustard
1 just-ripe avocado, skin and seed removed, sliced
4 slices Swiss cheese
Method
Preheat oven to 200◦C/180◦C fan-forced. Grease and line a baking tray with baking paper
Place 1 chicken breast between 2 sheets of baking paper. Gently flatten with a rolling pin to ½ cm thick. Repeat with remaining chicken
Coat each chicken breast in flour, shake off excess. Then dip in egg, and press into breadcrumbs, coating both sides
Heat and oiled non-stick fry pan, with enough oil to shallow fry, and fry chicken for about 2 minutes on each side or until golden
Transfer to prepared tray. Evenly spread mustard over the top side of the chicken. Top with sliced avocado and then the cheese
