Got an avocado leftover, these quick and easy recipes will allow you to use-up that last avocado. Great snack ideas, light lunches, and every family dinners.

Avocado and Banana Smoothie

Ingredients

  • ¼ of avocado
  • 1 ripe banana
  • 1 heaped tablespoons of honey
  • 200ml milk
  • 175g natural yoghurt
  • Approx ½ cup ice


Method

  1. Place all ingredients in a blender and blend until smooth. Serve immediately


Avocado Tuna Snack

Ingredients

  • 95 gram can tuna in oil, drained
  • 1 tablespoon whole egg mayonnaise
  • 1/4 ripe avocado, peeled, seed removed and chopped, drizzled with lemon
  • Pita Toasts, to serve


Method

  1. In a medium sized bowl, combine tuna and mayonnaise. Season to taste. Stir until combined
  2. Stir through avocado
  3. Serve with pita toasts


Avocado and Ham Salad Sandwich

Ingredients

  • 4 slices thick cut seeded sourdough bread
  • ¼ Avocado, mashed (with seasoning & lemon juice)
  • Leg ham slices
  • 4 Butternut lettuce leaves
  • ½ tomato (sliced)


Method

  1. Spread the avocado on top of each slice of bread
  2. Top with remaining ingredients and season to taste
  3. Slice sandwiches into halves or quarters


Easy Avocado Parmigiana

Ingredients

  • 1 chicken breast fillet
  • 1/4 cup plain flour
  • 1 egg, lightly whisked
  • 1/3 cup Panko breadcrumbs
  • 1 tablespoons Dijon mustard
  • 1/4 just-ripe avocado, skin and seed removed, sliced
  • 1 slice Swiss cheese


Method

  1. Preheat oven to 200◦C/180◦C fan-forced. Grease and line a baking tray with baking paper
  2. Place one chicken breast between 2 sheets of baking paper. Gently flatten with a rolling pin to ½ cm thick
  3. Coat each chicken breast in flour, shake off excess. Then dip in egg, and press into breadcrumbs, coating both sides
  4. Heat and oiled non-stick fry pan, with enough oil to shallow fry, and fry chicken for about 2 minutes on each side or until golden
  5. Transfer to prepared tray. Evenly spread mustard over the top side of the chicken. Top with sliced avocado and then the cheese
  6. Bake for 7-8 minutes or until cooked through
  7. Remove from oven and serve with a simple salad
