60g dried rice vermicelli, cooked as per packet instructions
Fresh coriander leaves
Sweet chilli sauce, to serve
Method
Place 1 rice sheet in warm water until just softened, remove and place on a clean damp tea towel
Lay a lettuce leaf towards one end of on the rice paper sheet, top with cucumber, carrot, avocado, rice vermicelli,
coriander leaves and 3 prawns horizontally
Fold bottom of rice sheet up over the filling, fold one side in and then roll up tightly
Repeat until all rice sheets are used and keep rolls under damp cloth while preparing each
