1x 280g De Costi Barramundi Skin on Fillets, cut in half
1x 375g De Costi Seafood Salad, to serve
1 Lemon, Sliced
1 small bunch parsley
1 tbsp Olive Oil
4 Dinner Bread Rolls, to serve
Lemons, wedges to serve
Chives, to serve
Aioli, to serve
Method
Lay 2 sheets of aluminium foil and brush each lightly with olive oil
Place Barramundi skin side down, sprinkle each with salt and pepper. Place sliced lemon, parsley and olive oil on top of the barramundi. Wrap securely, making sure that each parcel is completely sealed
Place Tomato & Herb Prawn on skewers around 4 or 5 prawns per skewer depending on size
Place Barramundi on pre-heated oiled BBQ cook for around 8-10 minutes until cooked
Place Prawns on pre-heated oiled BBQ cook for around 5-7 minutes until cooked turning once
Serve on plates with a bread roll, seafood salad, lemon and sprinkle with chives
Tips & Hints
If using wood skewers sook in water for minimum 30 minutes to reduce the wood burning on the BBQ otherwise use metal skewers
