Home > Chilli Scrambled Eggs
Ingredients
- 4 eggs
- 1 tbsp milk
- 2 tsp butter
- ½ long red chill, seeded, thinly sliced, extra to serve
- 50g goats cheese
- 4 slices ciabatta, chargrilled
- 2 tbsp sweet chilli jam
- Snow pea sprouts, ends trimmed
Method
- Whisk eggs and milk until combined.
- Melt butter in a medium, non-stick frying pan over a medium heat. Add chilli and stir for 10 seconds.
- Add egg mixture to pan. Cook for 10 seconds before using a heatproof spatula to continually and gently drag the mixture from the outside to the centre of pan. Cook for 1-2 minutes or until eggs are almost set.
- Crumble goats cheese over the top. Remove from the heat as eggs will continue to cook.
- Slide onto plate with ciabatta. Top with chilli jam and snow pea sprouts and serve.
Tips & Hints
- Swap ciabatta for sourdough rye to boost the fibre and butter for olive oil to make this recipe heart healthy.
