The best classic fluffy scrambled eggs are soft, light and gently folded for maximum texture. Cooked low and slow in butter, then served on toast with cracked black pepper.
Ingredients
4 eggs
2 tbsp milk
2 tsp butter
Toast of choice
Method
Whisk eggs and milk until combined.
Melt butter in a medium, non-stick frying pan over a medium heat.
Add egg mixture to pan. Cook for 10 seconds before using a heatproof
spatula to continually and gently drag the mixture from the outside to the
centre of pan. Cook for 1-2 minutes or until eggs are almost set.
Once eggs are beginning to set, use spatula to run around the outer edge of
mixture to form a circle of scrambled eggs.
Remove pan from the heat as eggs will continue to cook. Slide onto toast and
serve with cracked black pepper.

Choose wholegrain bread and swap butter for olive oil to make this recipe
