A classic made new – this Golden Syrup Slice is sweet, crunchy and golden with a hint of oats. Quick to make from pantry staples, it’s an old-fashioned favourite perfect for tea breaks or lunchboxes.

Base

Ingredients

  • 185g Fairy Margarine
  • ¾ cup (270g) golden syrup
  • 1½ cups (150g) quick oats
  • 1½ cups (165g) desiccated coconut
  • 1⁄3 cup (80g) brown sugar
  • 1 cup (150g) self-raising flour

Method

  1. Grease and line a 30x20cm slice pan with baking paper.
  2. Melt Fairy and golden syrup in a small saucepan or microwave in short bursts for 1-2 minutes or until melted.
  3. Combine remaining dry ingredients in a bowl and pour melted Fairy mixture on top. Fold or stir gently until combined.
  4. Press mixture into prepared slice pan and flatten with a flat-bottomed glass. Bake at 160C for 18-20 minutes or until golden. Allow to cool slightly before icing.

Icing

Ingredients

  • 1 tbsp Fairy cooking
  • 2 tbsp golden syrup
  • 1½ tbsp (30ml) boiling water
  • 2 cups (300g) icing sugar, sifted
  • Gold speckles, to serve (optional)

Method

  1. Melt Fairy and golden syrup in a small saucepan or microwave. Add icing sugar and stir to combine. Add boiling water and stir until smooth and thick. Spread over slice. Refrigerate for 1-2 hours.
  2. Cut into bars.

Tips & Hints

  1. Decorate with golden sprinkles for a festive flair. We used gold sprinkles available from supermarkets.
  2. Add a pinch of sea salt to the base to make the flavours pop.
  3. We used quick oats as they have a smoother texture, but you can always blitz regular oats, this will make the slice chewier.
  4. Slice will keep for 3-4 days in an airtight container.
