Herb butters: 3 ways

Enjoy three easy herb butters to add extra flavour to you steak, fish and vegetables too! These herb butter recipes make a wonderful addition to your summer barbecues or even Christmas celebrations.

Dill and Lemon butter

Ingredients

  • 250g block butter
  • 1/3 cup dill, chopped
  • Rind of 1 lemon
  • Salt to season


Method

  1. Chop butter, then in a bowl season with dill, lemon rind and salt. Mash to combine
  2. Tip butter onto a piece of baking paper, roll tightly into a log shape then twist the ends
  3. Freeze until firm
  4. Melt onto meat, fish or veggies


Chive, garlic and parsley butter

Ingredients

  • 250g block butter
  • 1/4 cup chives, chopped
  • 1/4 cup parsley leaves, chopped
  • 1 clove garlic, crushed
  • Salt to season


Method

  1. Chop butter, then in a bowl season with chives, parsley, garlic and salt. Mash to combine
  2. Tip butter onto a piece of baking paper, roll tightly into a log shape then twist the ends
  3. Freeze until firm
  4. Melt onto meat, fish or veggies


Chilli and parsley butter

Ingredients

  • 250g block butter
  • 2 chillies, chopped
  • 1/4 cup parsley leaves, chopped
  • Salt to season


Method

  1. Chop butter, then in a bowl season with chillies, parsley and salt. Mash to combine
  2. Tip butter onto a piece of baking paper, roll tightly into a log shape then twist the ends
  3. Freeze until firm
  4. Melt onto meat, fish or veggies


Tips & Hints

  1. Keep butters in the freezer until use
