Salad

Ingredients

  • 1x 260g De Costi Salt and Pepper Squid
  • 10-12 cherry tomatoes, sliced
  • ¼ red onion, sliced
  • ½ cucumber, chopped
  • Feta cheese, crumbled
  • ½ Cup Kalamata olives, pitted


Method

  1. Cook DeCosti Salt & Pepper Squid in a pre-heated oiled pan for 3-4 minutes turning frequently.
  2. Remove the squid and drain on absorbent paper.
  3. Toss together cherry tomatoes, red onion, cucumber, Kalamata olive and feta cheese in a bowl and top with salt and pepper squid.


Dressing

Ingredients

  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp minced garlic
  • 2 tbsp lemon juice
  • 2 tbsp red wine vinegar
  • Pinch of salt and pepper


Method

  1. Combine all of the ingredients in a small jug, then drizzle over the entire salad.
