Salt and pepper squid with greek salad

Salad
Ingredients
1x 260g De Costi Salt and Pepper Squid
10-12 cherry tomatoes, sliced
¼ red onion, sliced
½ cucumber, chopped
Feta cheese, crumbled
½ Cup Kalamata olives, pitted
Method
Cook DeCosti Salt & Pepper Squid in a pre-heated oiled pan for 3-4 minutes turning frequently.
Remove the squid and drain on absorbent paper.
Toss together cherry tomatoes, red onion, cucumber, Kalamata olive and feta cheese in a bowl and top with salt and pepper squid.
Dressing
Ingredients
2 tbsp olive oil
1 tsp dried oregano
1 tsp minced garlic
2 tbsp lemon juice
2 tbsp red wine vinegar
Pinch of salt and pepper
Method
Combine all of the ingredients in a small jug, then drizzle over the entire salad.
