Ingredients

  • 1x 280g DeCosti Crumbed Whiting Fillets
  • 1x long baguette or 4x small baguette
  • 4 tbsp whole egg mayonnaise
  • 2 cups of mixed lettuce
  • 1 carrot, thinly sliced
  • 1/2 red onion, finely sliced
  • 1 cucumber, thinly sliced
  • 1 red chilli, finely sliced
  • Fresh coriander leaves, to serve


Method

  1. Preheat oven to 180 °C. Place De Costi Crumbed Whiting on baking paper and bake for 6 minutes until golden brown.
  2. Slice the baguette down the middle, fill with mayonnaise, mixed lettuce, carrot, red onion, cucumber and crumbed whiting.
  3. To serve, top with chilli and coriander.
