Fish Vietnamese baguette

Ingredients
1x 280g DeCosti Crumbed Whiting Fillets
1x long baguette or 4x small baguette
4 tbsp whole egg mayonnaise
2 cups of mixed lettuce
1 carrot, thinly sliced
1/2 red onion, finely sliced
1 cucumber, thinly sliced
1 red chilli, finely sliced
Fresh coriander leaves, to serve
Method
Preheat oven to 180 °C. Place De Costi Crumbed Whiting on baking paper and bake for 6 minutes until golden brown.
Slice the baguette down the middle, fill with mayonnaise, mixed lettuce, carrot, red onion, cucumber and crumbed whiting.
To serve, top with chilli and coriander.
