Healthy Frozen Yoghurt Bark with Raspberries

Healthy frozen yoghurt bark recipe with honey, berries, pistachios and almonds. A fast and healthy snack idea.

Ingredients

  • 900g tub plain yoghurt
  • 2 tbsp honey
  • 1 x punnet fresh raspberries
  • 1/3 cup crushed unsalted pistachios
  • 1/4 cup flaked almonds


Method

  1. Place the yoghurt into a large bowl. Drizzle in the honey and stir to combine.
  2. Pour the yoghurt mixture into a baking tray lined with baking paper. Spread evenly in the tray.
  3. Scatter the fresh raspberries, pistachio and almonds evenly over the yoghurt mixture. Place in the freezer until set. Cut into pieces and serve immediately.


Tips & Hints

  1. Cut the bark into pieces and keep in an airtight container or in zip-lock bags in the freezer for up to 2 weeks.
