Easy one pan chicken tray bake for quick family dinners. Add an avocado salad to this easy weeknight dinner recipe.
Ingredients
1 x 1.8kg chicken, cut into 8 pieces (see tips)*
2 tablespoons olive oil, plus extra to drizzle
3 garlic cloves, crushed
salt and pepper
1 lemon, juiced
6 sprigs oregano
750g baby chat potatoes, halved
1 lemon, sliced
250g green beans, blanched and halved
2 avocados, cut into wedges
2 cups baby spinach leaves
100g fetta, crumbled
Method
Preheat oven to 220C fan forced
Put the chicken, oil, garlic, salt, pepper, lemon juice and oregano in a large bowl and mix to combine. Set aside to marinate
Place the potatoes on a large oven tray and cook in oven for 15 minutes or until golden brown. Top with the marinated chicken, marinade and lemon slices. Cook for 28-30 minutes or until golden brown and cooked through
To serve, top with beans, avocado and spinach. Crumble with fetta and drizzle with oil
