Creamy carbonara sauce is added to pasta, covered in cheese and baked for an easy weeknight dinner idea. Serve this Carbonara Pasta bake with a side salad.
Ingredients
500 g dried penne pasta
1 tbsp. olive oil
2 garlic cloves, crushed
200 g bacon or prosciutto, thinly sliced
200 g button mushrooms, sliced
2 eggs
¾ cup (185 ml) cooking cream (light thickened cream)
1 cup (125 g) Perfect Italiano™ Extra Sharp Parmesan Grated
Preheat the oven to 200°C / 180°C fan-forced. Cook pasta in large saucepan of boiling water, until just tender. Drain. Return pasta to pan.
Meanwhile, heat oil in a large frying pan over medium-high heat. Cook garlic, bacon and mushrooms, stirring for 6-7 minutes or until mushrooms are tender.
Whisk eggs, cream and 2 cups of the combined cheeses in a large jug. Season with pepper.
Add egg mixture and bacon mixture to pasta. Toss gently to combine. Transfer pasta mixture to a 1.5L (6-cup) capacity baking dish. Scatter with remaining combined cheeses. Bake for 15-20 minutes or until golden.
