Butter Chicken BBQ Ribs are rich, smoky and full of flavour. Indian-spiced chicken ribs are grilled on the BBQ until charred, then drenched in a creamy butter chicken sauce for an irresistible finish.
Ingredients
400g chicken ribs
Street BBQ Indian seasoning
Extra Virgin Olive oil
1 small red onion, thinly sliced
1 tbsp grated garlic
1 tbsp grated ginger
2 tablespoons Street BBQ Indian seasoning (for gravy)
4 tbsp tomato paste
1 cup cream
1 tbsp malt vinegar
½ bunch coriander, chopped
Method
Drizzle chicken ribs with olive oil.
Liberally season the ribs with Street BBQ Indian seasoning. Mix thoroughly to coat the chicken evenly. Let the chicken sit while you prepare the gravy.
To make the Butter Chicken gravy, heat ½ cup olive oil in a heavy pan or pot over medium heat.
Add the sliced red onion, grated garlic, grated ginger, and 2 tablespoons of Street BBQ Indian seasoning.
Sauté the mixture, stirring frequently, for 10–15 minutes, until the onions soften and become fragrant.
Stir in the tomato paste and cook for 3 minutes, stirring continuously.
Pour in the cream and malt vinegar, bring to a gentle simmer, and cook for 5 minutes. Remove from heat and set aside.
Heat your grill to medium-high. Grill the chicken ribs for 4–5 minutes on each side or until fully cooked and slightly charred.
Place the grilled chicken ribs in a serving bowl or plate. Generously pour the prepared butter gravy over the chicken then generously pour the prepared butter gravy over the chicken.
