Duck Breast Skewers with Chinese Spice is a bold BBQ dish. Thinly sliced duck is skewered, grilled skin-side down and brushed with a fragrant Chinese spice glaze until caramelised and perfectly cooked.
Chinese BBQ Glaze
Ingredients
3 tbsp Street BBQ Chinese seasoning
125ml Chinese black vinegar
75ml soy sauce
100ml olive oil
Method
Place all ingredients into a jar and shake until combined
Duck BBQ skewers
Ingredients
2 x "Luv-a-Duck" duck breasts
1 x Street BBQ Chinese seasoning
2 x Spring onions, finely sliced
1 x Long red chili, finely sliced
Method
Fire up your BBQ to hot, or use a small hibachi if you have one.
Thinly slice your duck then using two skewers insert through the meat so it is stable
Season generously with the seasoning and let sit for 5 minutes
Place the duck skin down on the grill and continuously keep turning every 30 seconds
When you see the duck starting to brown start applying the glaze with a brush at each turn.
After about 4 – 5 minutes the duck should be cooked to medium, rest and continue brushing the duck with the glaze all over.
Place onto plate and garnish with the spring onions and chilli.
