Beer Can Chicken is a BBQ classic that delivers juicy, flavour-packed roast chicken. Cooked upright on a beer can in a smoker or Traeger, it stays moist, tender and perfectly seasoned.

Ingredients

  • 1 x Smokin South Kansas seasoning
  • 1 x 1.6-1.8kg free range chicken
  • Extra virgin olive oil
  • 1 x Can Beer (your choice)

Method

  1. Start up your Traeger (see tips) or smoker and set to 350F/175C. Pre-heat for 10 minutes.
  2. Lightly oil the outside of the chicken then sprinkle with season - inside and all over the outside.
  3. Crack open your beer and remove ⅓ (for yourself or a guest), then place the chook over the can and place into the Traeger and cook for 60 – 80 minutes or until the internal temperature using a probe is 165F/75C.
  4. Let rest for 15 minutes then chop up, season with salt and Enjoy.

Tips & Hints

  1. A Traeger is a pellet smoker that uses compressed hardwood pellets to cook food with steady heat and a subtle smoky flavour. If you don’t have one, a standard BBQ with a lid or any smoker set up for indirect heat will work just as well.
