Carolina Pork Quesadillas are stacked with juicy pork, melty cheese and jalapeños, finished with tangy Carolina-style heat. Easy to cook, easy to flip and seriously hard to stop eating.
Ingredients
500g pork mince
SmokinSouth Carolina seasoning
1 red onion, finely chopped
5 garlic cloves, minced
2 tomatoes, finely diced
1 red capsicum (bell pepper), finely chopped
Splash of stock (any kind)
4 large flour tortillas
Grated cheese (your choice)
Fresh jalapeños, sliced
Fresh lime juice
Method
In a hot pan, sauté garlic and onion until soft and fragrant.
Add pork mince, breaking it up and browning well.
Stir in diced tomatoes and capsicum. Season with SmokinSouth Carolina and a splash of stock. Simmer for 5–8 mins until the mix is thick and rich. Remove from heat.
On one tortilla, layer pork mixture, cheese, jalapeños, and a squeeze of lime. Top with a second tortilla and press gently.
Cook in a dry pan or sandwich press — crisp one side, flip, and repeat until golden. Slice into wedges and serve hot.
