This quick and easy penne pasta recipe is a great veggie smuggler dinner idea. Lots of vegetables are cooked into tomato sauce with beef or pork mince to make a tasty family meal.
Ingredients
500g dried penne pasta
1 carrot, peeled
1 zucchini, trimmed
1 onion, peeled and quartered
2 cloves garlic
2 tablespoons olive oil
500g beef or pork mince
750ml Italian tomato and basil passata
Salt and pepper
125g Perfect Italianoâ„¢ Traditional Parmesan Grated
Method
Bring a large saucepan of water to the boil and cook pasta according to packet instructions. Drain and refresh with cold water
Heat oil in a large heavy based pan over high, add mince and stir breaking up any lumps until meat is browned
While beef is cooking, process carrot, zucchini, onion and garlic in a food processor until finely chopped. Add vegetables to pan and cook for 2 minutes
Stir in passata and mix well; bring to the boil. Reduce heat to medium simmer, uncovered for 10 minutes. Sauce should be rich and thickened. Season to taste with salt and pepper
Toss cooked penne through hot pasta sauce along with half the Parmesan. Divide amongst plates and top with remaining Parmesan
Tips & Hints
Use a box grater if a food processor is unavailable.
