Ingredients
400–500g boneless, skinless chicken thighs, diced into bite-sized pieces
1 tbsp oil
1 tbsp yoghurt
2 tbsp rice flour
1 tbsp corn flour
1 tsp chilli powder
1 tsp minced garlic
1 tsp minced ginger
Street BBQ Indian
Fresh lime juice (to serve)
1 sliced red chilli (to garnish)
Cucumber yoghurt (side dish)
Method
In a mixing bowl, combine oil, yoghurt, rice flour and corn flour. Add chilli powder, minced garlic, minced ginger and a generous shake of Street BBQ Indian.
Add diced chicken and coat well. Let marinate for at least 30 minutes, or refrigerate overnight for deeper flavour.
Place chicken pieces evenly on a rack inside the air fryer basket. Cook at 200°C for 15 minutes, turning the pieces halfway through. Remove once crispy and cooked through.
Toss chicken with a squeeze of fresh lime. Garnish with sliced red chilli.
Serve with a side of cucumber yoghurt to cool the heat.
