Ingredients
- 1 x Street Kitchen, Satay Kit, including: Malaysian Peanut Satay Sauce, Garlic & Ginger Paste and Dried Onion & Garlic Mix
- 300g diced chicken thigh fillet
- 150g mixed vegetables (Red Capsicum 100g, Brown Onion 50g)
- 2 tbsp canola or vegetable oil
- 2 cups steamed Jasmine rice
Method
- COAT: Mix Garlic & Ginger Paste through diced chicken pieces and set aside.
- SEAR: Flash fry Dried Onion & Garlic Mix in hot and well-oiled medium saucepan for 5 seconds. Add marinated chicken and cook until well seared, then add vegetables and stir-fry with chicken for 1 minute.
- SIMMER: Add Malaysian Peanut Satay Sauce, mix well and reduce heat to low. Simmer until chicken and vegetables are fully cooked and tender (approx. 20 minutes). Serve with steamed Jasmine rice.
Tips & Hints
- For a delicious alternative, marinate chicken in Ginger & Garlic Paste and Satay Sauce for 1-2 hours. Thread on skewers, then BBQ.
- Also great with beef, seafood or vegetables.
