Aromatic Satay Prawn Curry
  1. HEAT half the oil in a wok and saute the prawns in batches until just cooked and golden. Set aside
  2. HEAT the remaining oil and cook the curry paste until just fragrant. Add the vegetables, spring onions and garlic and stir fry until just cooked but still crisp
  3. ADD coconut milk, peanut butter, paprika, brown sugar and lime juice and heat sauce without boiling
  4. RETURN the prawns to the wok and heat through, then spoon over rice and serve with lime and coriander. Serve immediately
