This easy beef salad topped with a creamy poached egg has a zingy Thai-style dressing with lime and chilli.

Asian Style Beef & Egg Salad
  1. Season steak with salt and pepper. Preheat a non-stick frying pan over medium high heat. Spray pan and cook steak 3 minutes each side. Set aside to rest for 5 minutes. Slice thinly and set aside
  2. Combine watercress, cucumber, tomatoes, snow peas and green onion and mix well. Divide amongst 4 dinner plates. Arrange sliced steak over the top and drizzle with a little of the dressing
  3. Heat about 5cm water in a large saucepan or deep frying pan. Bring to a simmer. Carefully crack the eggs into a cup, then slide into the water. Cook for 3 minutes, until the whites have set and yolks still creamy
  4. Place a poached egg on top of each salad. Drizzle with more dressing and garnish with fresh coriander. Serve immediately

  1. Combine dressing ingredients and mix well
