Method:
Cajun Fried Chicken with Charred Corn & Tomato Salsa
  1. Combine the chicken, oil and Cajun seasoning in a large bowl and toss to coat chicken. Arrange the chicken in a single layer on a paper lined baking tray and bake in a moderate oven 180°C for 30-35 minutes or until cooked through. Keep warm
  2. Spray the corn with oil spray and season to taste. Cook on a heated char grill pan or BBQ until lightly charred. Remove and cool for 10 minutes before slicing kernels off the cob
  3. Combine the tomatoes, onion, coriander, almonds and corn in a serving bowl
  4. Serve the chicken with corn and tomato salsa, drizzled with dressing. Serve immediately
Tips & Hints:
  • Substitute fish fillets such as flathead fillets for the chicken if desired. Cajun seasoning mix is available in the herbs and spices section of the supermarket.
