Carrot and Muesli Muffins
Ingredients:
Method:
  1. Preheat the oven to 180°C
  2. Place muffin papers into a large muffin tin
  3. In a bowl combine flour, muesli, carrot, sugar and cinnamon
  4. Lightly whisk the eggs, add the oil and pour into the flour mix
  5. Mix with a wooden spoon until well combined
  6. Spoon evenly into the muffin tins
  7. Place into the oven and bake for 15 minutes, insert a skewer into the middle of a muffin if it comes out clean the muffins are ready
  8. Rest in the tin for 5 minutes then transfer to a cooling rack
Tips & Hints:
  • Best result is with muesli that is full of fruit.
