Chewy Oat Slice
Ingredients:
Method:
  1. Mix all ingredients thoroughly in a large bowl
  2. Evenly press mixture into a lined 20cm square pan slice tin, lined with baking paper. Cut baking paper larger than the tin so that you have an overhang, making it easier to remove the slice once cooled
  3. Cook in a preheated moderate oven (160°C fan-forced) for approximately 20-25 minutes, until golden and firm
  4. Cool in the tin. Serve cut into bars

I also tweaked the recipie a bit by halving the amount of sugar and swapping out the caster for brown. Also I added some cinnamon and vanilla essence and replaced the honey with maple syrup. Lastly I added a cup of juicy sultanas to give it some extra goodness. Also I cooked it for 30 mins on 160 in a fan forced oven because my middle was initially a bit too soft too. Haven't tried it yet (irs currenly cooling) but smells delicious! Looking forward to trying it.

I tweaked this recipe by adding only 1/2 cup of sugar, wholemeal self raising flour, diced dried apricots and 1/2 cup of rolled oats and 1/2 cup of quick oats. It was plenty sweet enough and super tasty. I also sprinkled flaked almonds on top. Delicious.

I have made this slice a number of times now. I cook it on 180 for 20 minutes. The first time I made it I baked at 160 (in a fan forced oven with a seperate thermometer to monitor the temperature), the edges were crunchy but the middle was undercooked. Once the slice has cooled I chill it in the fridge for a little while so it cuts neater. Such a simple and delicious recipe, rarely lasts more than a day!

One of those lovely easy, 'throw everything into the bowl' slice recipes that I do so love. Turned out beautifully, however it would be nice for first time cooks if the correct 'normal oven' temp was displayed as not everyone is lucky enough to own a Fan Forced oven so new cooks might well set their oven to an incorrect temperature. For those of you without a fan forced oven ( like myself), the conventional oven temperature is 180c. I also used a combo of Rolled Oats and Scottish Oatmeal to make up the one cup of (quick) oats, to give slice a nice chewier texture.
